This low-carb, high-fat keto Alfredo sauce is really simple to make and goes great with keto pasta or tender grilled chicken.

Ingredients

  1. ¼ cup heavy whipping cream
  2. 1 ounce mozzarella cheese, cubed
  3. 1 tablespoon butter
  4. ½ teaspoon onion powder
  5. ½ teaspoon minced garlic
  6. 1 dash salt
  7. 1 dash ground black pepper

Instructions

  1. Combine heavy cream, mozzarella cheese, butter, onion powder, garlic, salt, and pepper in a small saucepan over medium heat. Cook and whisk ingredients until smooth, 3 to 5 minutes. Simmer, stirring occasionally, for 5 minutes more.
  2. You can also use 1 mozzarella string cheese cut or torn into very small pieces.

It mixed up quickly and was good on my noodles. I used 1 stick of string cheese as suggested by the submitter, and I was surprised at the good result. I thought it was too much garlic and onion powder for the amount of cream and cheese. I would cut both at least in half or even just use one fourth.

I used half and half, cream cheese, and fresh mozzarella just to use up what I had on hand. A little pesto added some zest

This is a pretty solid recipe. I’m not doing keto, but I have a type 1 diabetic boyfriend that medically needs to watch carbs. For some reason the web page wouldnt allow me to adjust the measurements for extra portions, but I winged it using basic math lol. I did end up going a liiiittle heavier, ever so slightly, with the mozzarella to keep it thick. Seasoned with some chili flakes and paprika to give it some extra oomf and color. Added marinated chicken, bacon and spinach and it was heavenly. Will definitely do this recipe again!

it needs more salt than what the recipe calls for. I am lactose intolerant and the recipe still works

my whole family loved this recipe. i made a few adjustments .. first i melted the butter and threw in a few small garlic cloves to roast then added the rest of the ingredients. i also added garlic powder because you can never have enough garlic. lol i only had shredded mozzarella and it worked great. thanks for the recipe! i will definitely make this again.
