Homemade Chicken Fettuccine

  4.5 – 187 reviews  • Alfredo

The lack of a thickening agent and the versatility of this chicken fettuccine Alfredo recipe make it particularly special.

Prep Time: 10 mins
Cook Time: 15 mins
Total Time: 25 mins
Servings: 4

Ingredients

  1. 8 ounces fettuccini pasta
  2. 2 tablespoons butter
  3. 3 skinless, boneless chicken breast halves – cut into chunks
  4. 8 ounces mushrooms, sliced
  5. 1 teaspoon garlic salt
  6. ⅛ teaspoon ground black pepper
  7. 1 ½ cups heavy cream
  8. ¼ cup grated Parmesan cheese

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add fettuccine and cook for 8 to 10 minutes or until al dente; drain.
  2. Meanwhile, heat butter in a large skillet and brown chicken and mushrooms until chicken is cooked through. Season with garlic salt and pepper. Add whipping cream and cook until thick, stirring constantly. Add Parmesan cheese when at desired consistency. Serve over noodles.
  3. You can make this as seafood fettuccine Alfredo, too: just substitute 1 package of imitation crabmeat and 1 small bag of frozen, cooked salad shrimp for the chicken breasts.

Recipe was good to use as a guide. I added 4 fresh cloves of garlic. I didn’t have heavy whipped cream so I used half and half and added flour to thicken. Also added frozen peas. It came out delicious!

Such a easy and delicious dish. I did increase the cream to 2 cups and added 1 T of flour to the chicken and butter. I didn’t have any mushrooms so sadly had to make it with out. I will be definitely be making this again soon!

Excellent recipe! I made a big pan so pretty much had to double the sauce. Since I only had 2 cups of whipping cream, I used half and half for the rest and made a slurry to thicken a bit. Seriously this was such an easy and yummy recipe!

It came out good. I like cooking the sauce in with the chicken flavorings, it gives it more flavor and that way you don’t need to use chicken broth. The only thing I didn’t like was that the chicken absorbed all of the sauce which had me improvising and making more with regular milk and way more heavy cream, parmesan, seasoning and butter because I was making a serving of 6. I also added some dried Italian seasoning and dried Basil. I just ended up eyeballing after that, but my pasta came out good.

I loved it! So simple but still tastes great! I’ve added frozen broccoli crowns and my family loves it!

I used fresh spinach instead of mushrooms and used a rotini noodle. (Easier for kids) I used 2 extra tbsp butter with minced garlic. For the Alfredo I used 3 cups of heavy cream and an entire 1/1/4 cup bag of shredded Parmesan.

Didn’t have mushrooms, but I did use the rest of the ingredients. Family liked it. Daughter even asked to make more next week. Guess I better stick with this recipe.

I thought this dish was outstanding. Admittedly, I did add more fresh grated parm that what it called for, but it was “better than a restaurant” according to my daughter! Great recipe!

Doubled the recipe. Recipe did not call for it, but I sauteed onion, bell pepper, and garlic with the mushrooms. Added Mexican cheese when melting parmesan. Also, after ingredients were combined I poured into casserole dish, topped with French fried onions, and placed in oven @350 until onions browned. Excellent flavor! Fairly easy prep. *I followed this recipe as a guideline, with my own twist. Either way, quite tasty. Great way to use leftover chicken (or turkey). I de-boned a chicken.

I cannot have cows milk anymore in my diet, but I seem to do fine with parmesan cheese. so I sub the butter for ghee and the heavy cream for coconut cream. turned out delicious. I however added 1/2 cup parmesan and topped with more cheese.

I used fresh garlic, added 1/2 onion, roasted the chicken (just because I roast a lot for meal prep) and it came out ah-mazing!

Great recipe and only change was adding one minced garlic clove and black pepper when cooking chicken. From beginning to end was 30 minutes. Hubby loved it so on our meal rotations

My family loved this. Quick and easy prep time. No weird ingredients. I added shrimp, and it was delicious.

Very tasty! I had to add flour to the cream to thicken it but it was very good!
