Easy Vegan Cauliflower Alfredo Sauce

This side dish of spinach, cream cheese, and Parmesan cheese is rich and flavorful.

Ingredients

  1. 1 teaspoon olive oil
  2. ½ white onion, chopped
  3. 3 cloves garlic, crushed
  4. 3 cups chopped cauliflower
  5. 1 cup vegetable broth
  6. 1 tablespoon nutritional yeast
  7. 2 teaspoons Himalayan salt
  8. 1 ½ teaspoons lemon juice
  9. ½ teaspoon soy sauce

Instructions

  1. Heat olive oil in a saucepan over medium heat. Add onion and cook until soft, about 3 minutes. Add garlic and cook for 1 minute more. Add cauliflower and vegetable broth; cover with lid and simmer over medium heat until tender, about 5 minutes.
  2. Place cauliflower mixture in a blender. Add nutritional yeast, salt, lemon juice, and soy sauce; blend until smooth and creamy, about 3 minutes.

I liked this, but found I had to add black pepper and chipotle peppers to amp up the flavor profile. By itself it was a little bland for me.

DELISH!!!! I doubled the sauce for a pound of pasta. I added peas and vegan ham to turn it into a carbonara. It was a little salty and you may not want to double the Himalayan salt but we added more lemon juice and that did the trick. VERY GOOD!!!
