Tricolore Pasta Salad

Ingredients

  1. 1/4 cup apple cider vinegar
  2. 2/3 cup extra-virgin olive oil
  3. 1 teaspoon kosher salt
  4. One 12-ounce box tricolor fusilli pasta
  5. 3 cups baby arugula, chopped
  6. 1/2 cup basil leaves, chopped
  7. 1 cup cherry tomatoes, quartered
  8. 1/4 cup peppadew peppers, chopped
  9. 8 slices (about 4 ounces) provolone cheese, diced
  10. 1/2 teaspoon kosher salt

Instructions

  1. For the dressing: Whisk together the vinegar, oil and salt in a large bowl. Set aside.
  2. For the salad: Cook the pasta according to the package directions, about 9 minutes. Drain well and let cool slightly until just warm to the touch, about 5 minutes.
  3. Add the pasta to the dressing and toss well to coat. Allow to cool to room temperature in the dressing, tossing occasionally. Add the arugula, basil, tomatoes, peppers, cheese and salt and toss well to combine and coat everything in the dressing. Serve immediately or refrigerate until ready to serve.

I made this last night, and to say it was a HUGE success would he putting it mildly! My brother and dad ate it with abandon (they ate more of this than they did the sausage and peppers I made).

The only things I changed were that I used roasted red peppers instead of peppadews and mozzarella instead of provolone.

This will list definitely go into my side salad rotation!!

I did not double the vinaigrette and it was perfect. Maybe others used 1lb of pasta instead of 12oz? Either way doing it again at least once more this summer!

We loved this! I did have to make some changes. I used spinach instead of arugula since my market was out. Also used a jar of roasted red peppers that I had. I did not have to double the dressing as some people mentioned. But I did add Italian seasoning and Dijon. Will definitely make again!

Delicious!  Everyone loved this recipe!  I added black olives for color, doubled the dressing recipe and added some honey, Dijon mustard and Good Seasons dry Italian dressing to it for my seasoning!  Yummy!

My family really liked this pasta salad and my husband is very picky about pasta salads. I did double the vinaigrette. I also added to the vinaigrette a teaspoon of Italian seasoning, a pinch of sugar and a teaspoon of Dijon mustard. That gave the vinaigrette more flavor. Trust me, you will need the vinaigrette as the pasta will soak it up and you will have a dry pasta salad.
