Tortellini Salad with Tomato-Arugula Dressing

Ingredients

  1. 2 packages frozen cheese tortellini
  2. 2 cups arugula (baby or regular)
  3. 1 cup grated Parmesan
  4. 1 cup oil-packed sun-dried tomatoes
  5. 1/4 cup fresh basil leaves
  6. 1/4 cup lightly toasted walnuts
  7. 1 tablespoon freshly squeezed lemon juice
  8. 1 clove garlic
  9. 3/4 cup extra-virgin olive oil
  10. Kosher salt and freshly ground black pepper

  12. 1 cup oil-cured black olives, pitted and sliced
  13. 1 orange bell pepper, diced

  16. 1/2 cup fresh basil, cut into chiffonade
  17. Freshly grated Parmesan, for garnish

Instructions

  1. For the tortellini and tomato-arugula dressing: Cook the tortellini to al dente according to the package directions. Drain and let cool.
  2. In a food processor, add the arugula, Parmesan, sun-dried tomatoes, basil, walnuts, lemon juice and garlic and pulse until just combined. Slowly stream in the olive oil until the dressing has a nice rustic consistency, about 10 seconds. Season with salt and pepper.
  3. For the salad: In a large bowl, mix the tortellini with the dressing until the pasta is completely coated. Add in the olives and bell peppers and mix. Season with salt and pepper and garnish with basil and Parmesan.

Saw this recipe on The Kitchen. It seemed easy and flavorful to make. I am so glad I decided to try it. Not only was this an easy recipe to prepare but the flavor bomb from this pesto sauce was amazing!! I think you could use it on any pasta or even meats. I left off the olives. Will be a go to meal in my kitchen. Perfect for a potluck.

Hard to find oil cured olives, but finally got them at a specialty market olive bar. Since I didn’t know the size of the bags of tortellini I used one big pkg from Costco. Mixed everything up but the sauce was too much, so now I’m adding another package of tortellini. It tasted good but too strong. will probably be better with more pasta added. please list the pkg wt in the recipe instructions

Fabulously tasty & easy (what did we do before food processors?!?!)! Like the commenter, Laurie, I watched this today, went out & bought theingredients. Couldn’t even wait for it to cool/set up; I’m enjoying a “tasting bowl” right now! It’s still warm–mmmmmm! Great change-up from the typical pasta salad. And Jeff’s comment re the nooks & crannies of the pasta holding the “sauce”!!!
