Ingredients

  1. 1/2 cup mayonnaise
  2. 1/2 cup low-fat Greek yogurt
  3. 2 tablespoons apple cider vinegar
  4. 1 tablespoon honey
  5. 1/2 cup drained cornichons, chopped
  6. 1/2 cup mixed chopped fresh herbs such as tarragon, basil and dill, roughly chopped
  7. 1/4 cup drained capers, chopped
  8. 4 small inner stalks celery and the leaves, chopped fine
  9. 1 small bulb fennel, chopped fine
  10. 1 pound short pasta such as casarecce, fusilli or elbow, cooked and cooled
  11. 1/2 teaspoon kosher salt

Instructions

  1. Whisk together the mayonnaise, yogurt, vinegar and honey in a large bowl. Stir in the cornichons, herbs, capers, celery and fennel until combined. Add the pasta and salt and toss until well coated.

Another amazing recipe from Giada! I’ve prepared many of here recipes…all great! I used whole wheat pasta instead, and sour cream as didn’t have yogurt. Basil and tarragon, and juice- zest 1 lemon. This will be my go to pasta salad for summer! Enjoy watching her programs Sunday morning on foodnetwork. Thank you for sharing your great recipes and family life! Inspired me to travel to Italy.

Easy to make. Had a nice pickley flavor. I think it was mostly a hit and a miss for at least one (who “doesn’t like tarragon”). Probably won’t make it often, but a nice change of pace from a typical macaroni salad.

This is the pasta salad recipe I have been looking for – all fresh ingredients – fresh spring/summertime flavors and I didn’t have to cook something to add – other than the pasta.  I think the (pickle) you use could be adjusted to your taste as well.  It is delicious!

We love this! I do recommend waiting for the pasta to cool significantly and/or rinse the hot pasta with cool water (which I know isn’t recommended with pasta…you’ll thank me later. If you don’t wait for the pasta to cool, the Mayo mixture separates and gets weird. Also I don’t always have the fresh herbs so I sub for fresh basil.

When I saw this episode I had to make it immediately for my camping trip. It was a hit among all my friends! The flavor is so unique for a pasta salad, the fresh herbs and cornichons together make this so fresh and flavorful.

Great salad, but do NOT roughly shop the herbs. Chop them as finely as you can. I rough-chopped them and the taste is way too strong. It overpowered everything else.
