Pasta Salad on a Stick

Ingredients

  1. One 9-ounce package cheese tortellini
  2. 1 pint cherry tomatoes
  3. 4 ounces sliced salami
  4. One 14-ounce can artichoke hearts, drained well, patted dry and cut in half
  5. 1/4 cup prepared Italian dressing
  6. 1/4 cup mayonnaise

Instructions

  1. Bring a pot of water to a boil and cook the tortellini according to the package instructions, draining them 1 to 2 minutes before indicated on the package to keep them very al dente. Cool to room temperature before assembling.
  2. To assemble, start with a cherry tomato to hold everything securely on the skewer. Then add a tortellini, a slice of salami folded in quarters, another tortellini, an artichoke half, tomato, tortellini, salami slice and finally, another tortellini. Repeat with the remaining skewer ingredients.
  3. In a small bowl, whisk together the Italian dressing and mayonnaise. Arrange the skewers on a platter, drizzle with the dressing and serve.

Made these for Super Bowl, huge hit and they were a pretty presentation. Completely forgot the artichoke hearts while shopping and they were still delicious, easy to make and leftovers keep really well.

Friday night after the work week ends, we like to start the weekend off with a nice glass of wine and a couple of appetizers before dinner. These have become a go to and will be even better when the weather gets warmer.
