Italian Herbed Pasta Salad with Salami

Ingredients

  1. Kosher salt and freshly ground black pepper
  2. 1/3 cup olive oil
  3. 2 tablespoons white wine vinegar
  4. 1 small shallot, minced
  5. 8 ounces dried radiatore
  6. 4 ounces sliced salami, cut into thin strips
  7. 1 cup diced fresh mozzarella
  8. 1 cup halved grape tomatoes
  9. 1/2 cup torn fresh basil leaves
  10. 1/2 cup giardiniera, drained and chopped
  11. 1 tablespoon chopped fresh oregano

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  3. Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  4. Add the salami, mozzarella, tomatoes, basil, giardiniera and oregano to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

Simple recipe. Definitely use fresh herbs, as that is the main flavor for this dish.
