Ingredients
- Kosher salt and freshly ground black pepper
- 1/4 cup mayonnaise
- 1/4 cup Parmesan
- 1/4 cup sour cream
- 1 tablespoon lemon juice
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon finely grated garlic
- 8 ounces penne pasta
- One 8-ounce boneless, skinless chicken breast
- 1 1/2 teaspoons olive oil, plus more for oiling the grill grates
- 1 1/2 cups shredded romaine lettuce
- 1/4 cup finely chopped celery
- 2 medium vine-ripe tomatoes, chopped
Instructions
- Bring a large pot of salted water to a boil.
- Whisk the mayonnaise, Parmesan, sour cream, lemon juice, Worcestershire, garlic, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl.
- Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool. Add it to the large bowl and set aside.
- Prepare a grill or grill pan for medium-high heat. Sprinkle the chicken breast with salt and pepper. Lightly oil the grill grates or grill pan. Grill the chicken, flipping once, until well-marked and the internal temperature registers 165 degrees F on an instant-read thermometer, about 7 minutes per side. Transfer to a cutting board and let rest for 5 minutes, then cut into 1/2-inch pieces.
- Add the grilled chicken, romaine, celery and tomatoes to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

This recipe was included with ‘The 35 Best Packable, Back-to-School Lunches for Kids’. That is, it wasn’t served right away as the directions suggest. Don’t you know the lettuce was soggy by lunch? Pass
This was delicious! Made exactly as written. Mixed all the ingredients, then added the dressing last. Serve immediately so the lettuce doesn’t wilt. Great summer dinner. ☀️
I just finished enjoying this delicious chicken Caesar pasta salad. I followed the recipe to a T. It was very filling and flavorful, next time I’m gonna add small potatoes as well as leave the romaine lettue a bit bigger instead of chopped. Please please attempt this meal. Your tastebuds will thank me.
I made this and ate it all myself! It’s best if your chicken and lettuce pieces aren’t too much bigger than the pasta. : )
I’ve never experienced lettuce and noodles in the same bite before! Strange, yet fantastic! I’m about to have it for the second time this week!
I just made this for my lunch for a few days. I had enough for 3 meals. 1 for dinner tonight. I put everything in a bowl except the dressing and tomato I put in 2 separate bowls. Omg this is amazing I’m writing this recipe down in my recipe book for future dinner/lunch meals. I dont like ceaser dressing at all but I licked the bowl clean on this one haha.
This is a keeper
