Ingredients

  3. 1 cup finely diced crunchy fennel
  4. 1 cup slivered roasted red peppers
  5. 1/4 cup finely sliced black pitted olives
  6. 1/2 cup packed Italian parsley, chopped
  7. 1/2 cup dressing made with olive oil, balsamic vinegar, garlic
  8. Salt and freshly ground black pepper
  9. Crumbled goat or feta cheese for garnish

Instructions
