Ingredients

  1. 1 garlic clove
  2. Kosher salt
  3. 1/4 teaspoon red pepper flakes
  4. 2 pounds heirloom tomatoes, assorted colors and sizes
  5. 12 ounces fresh mozzarella, diced
  6. 1/2 cup chopped fresh basil leaves
  7. 1/4 cup chopped fresh mint leaves
  8. 1/3 cup extra-virgin olive oil
  9. 1 (13.25-ounce) package Whole Grain Thin Spaghetti

Instructions

  1. Crush and chop the garlic with 2 teaspoons salt and pepper flakes. Cut the tomatoes into 1 to 2 inch pieces. Halve or quarter them, if small. Toss the tomatoes with the seasoned garlic, mozzarella, herbs, and extra-virgin olive oil. (This can be prepared up to 2 hours ahead).
  2. Cook pasta according to the package directions. Drain and toss with the tomato mixture. Serve warm or at room temperature.
