Spicy Arrabiata Penne

Ingredients

  1. Kosher salt and freshly ground black pepper
  2. 1 pound penne rigate (penne pasta with ridges)
  3. 1/4 cup olive oil
  4. 3 cloves garlic, chopped
  5. One 26.42-ounce container chopped tomatoes, such as Pomi
  6. 1/2 teaspoon red chile flakes
  7. 1/2 teaspoon Italian seasoning
  8. 6 leaves fresh basil, chopped, plus more for garnish
  9. Block of Parmigiano-Reggiano, for garnish

Instructions

  1. Bring a large pot of water to a boil. Add kosher salt to the boiling water, then add the pasta. Cook according to the package instructions, about 9 minutes.
  2. In a large skillet over medium-high heat, add the olive oil and heat until the oil starts to shimmer. Add the garlic and cook, stirring, until fragrant, 1 to 2 minutes. Add the chopped tomatoes, red chile flakes, Italian seasoning and salt and pepper to taste. Bring to a boil and cook for 5 minutes. Remove from the heat and add the chopped basil.
  3. Drain the pasta and add it to the sauce. Garnish with Parmigiano-Reggiano flakes and more basil and serve warm.

This recipe is the closest thing to chef driven arabiotta! My garden basil worked wonders in this fabulous blending of flavors. Be sure to add the chopped basil after removing the sauce from the heat. I slipped, added it too soon. It still worked well, but would have been more aromatic at the end, especially as a green garnish. Not difficult to prepare, absolutely delicious for lunch or dinner. Buon appetito!

This was tasty enough but I found the sauce to be too thin.  It didn’t really coat the penne.   I almost wanted to add a jar of Rao’s arrabiata sauce.

Enjoyed making this recipe.  Added 1/4 cup red onion sautéed in the olive oil along with garlic and spices to bring up flavors.  Simmered sauce about 15 minutes and then partially pureed with an immersion blender.  I like a smoother sauce with a few lumps.  Used Muir Glen tomatoes and they are okay but not very sweet so added 1/2 tsp sugar to mellow.
