Spaghetti with Oven Baked Clams

Ingredients

  1. 40 littleneck clams, well scrubbed
  2. 1/4 cup extra-virgin olive oil, plus more for drizzling
  3. 10 garlic cloves, smashed with the back of a knife
  4. 1/4 pound pancetta, small dice
  5. 2 dried red chiles
  6. Handful fresh basil leaves
  7. 1/4 cup white wine
  8. 2 pints cherry tomatoes,(yellow and red), stemmed
  9. Freshly ground black pepper
  10. 1 pound spaghetti

Instructions

  1. Preheat the oven to 400 degrees F. Bring a large pot of salted water to a boil. Meanwhile, scrub the clams with a stiff brush under cold running water and discard any that are open. Put a medium roasting pan over 2 burners. Add the olive oil, garlic, pancetta, chiles, and herbs and cook until the pancetta renders, 3 to 4 minutes. Add the clams, the wine, tomatoes, and a good amount of pepper and toss that all together. Transfer pan to oven and roast until the clams open, about 10 minutes. While the clams are cooking, drop the pasta into the water for 7 to 8 minutes. Drain. Dump the drained pasta into a serving bowl, and toss with clams. Garnish with fresh basil leaves, freshly ground black pepper and a drizzle of extra-virgin olive oil.

Easy to make. Looks elegant and tastes great! Roasting the clams was a nice variation of this popular recipe. Added fresh pecorino and parmesan cheese and dried crushed red pepper chili flakes.

Amazing amazing easy recipe. I have cooked this dish many times and its always a sure fire hit with guests. I even made it during xmas dinner. Its super fast and easy. It tastes gourmet and also full of fresh ingredients. The pepper and pancetta give it just enough spice to give this dish a kick. Highly recommend.

Wow…I have served this to some real foodies and gotten rave reviews. It is easy, delish and the stuff that gourmet restaurants charge $30 a plate for. I add coarsely chopped onion and saute the onions with the pancetta and garlic. Excellent…leftovers the next day punch out the flavors even more.
