Sloppy Joe and Macaroni Casserole

Ingredients

  1. 3 tablespoons dark brown sugar
  2. 3 tablespoons red wine vinegar
  3. 3 tablespoons Worcestershire sauce
  4. One 15-ounce can tomato sauce
  5. 2 tablespoons EVOO
  6. 1 1/2 pounds ground beef (80-to-85-percent lean)
  7. Kosher salt and freshly ground pepper
  8. 3 to 4 cloves garlic, finely chopped
  9. 1 red bell pepper, seeded and finely chopped
  10. 1 onion, finely chopped
  11. 1 cup beef broth
  12. 12 ounces elbow macaroni with ridges
  13. 2 cups shredded yellow Cheddar
  14. 1/2 cup chopped crisp deli-style dill pickles

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Combine the brown sugar, vinegar, Worcestershire sauce and tomato sauce in a small bowl. Heat the EVOO in a large skillet or Dutch oven over medium-high heat. Add the beef and cook until well browned. Season with salt and lots of pepper. Add the garlic, bell peppers and onions and cook, stirring, for 5 minutes. Pour the tomato mixture over the beef, add the beef broth and stir until well combined. Simmer until thickened, 5 to 10 minutes.
  3. Meanwhile, cook the macaroni in a large pot of salted boiling water until not quite tender, about 5 minutes. Drain and add to the sauce. Pour the mixture into a casserole dish and top with the cheese.
  4. Bake until the casserole is bubbling and the top is browned. Top with the pickles and serve from the dish.

Made this recipe last nite & it’s very good but just something more needed. Next time I’ll definitely add more tomato sauce & veggies such as an extra pepper, an jalapeño or two, and even more onions. It was just a little bland for me.

Ick. Waste of ingredients. And yes, I added a ton of pickles. It’s a fair idea but I cook better than this recipe. Keep searching on this site lots of better alternatives. Thanks.

Huge hit with my family! I wasn’t sure about the diced pickels so I served those on the side for each person to add how much they wanted. The diced pickels topped it off! Tasted awesome, I will just add them all over the top next time I make this!
