Ingredients
- 2 large yellow onions, halved and thinly sliced
- 12 ounces penne pasta
- 1 1/2 cups grated Pecorino Romano cheese
- Salted butter
- Kosher salt and freshly ground black pepper
Instructions
- Heat 2 tablespoons of butter in a large skillet over medium heat. Add the onions and season with salt and pepper. Cook, stirring occasionally, until caramelized, for 10 to 12 minutes.
- Meanwhile, cook the penne according to package directions in lightly salted water. Reserve 1 cup pasta cooking water, then drain.
- Increase the heat under the skillet to medium-high and stir the cooked penne and reserved pasta water into the skillet. Let the sauce simmer and reduce until it thickens, for 1 to 2 minutes.
- Remove the pan from the heat and stir in the grated cheese until partially melted.
- Top with freshly ground black pepper and serve immediately.

I added a little garlic and red pepper flakes to boost the flavor and sprinkled on some parsley to give it some color. I will add some spinach or peas the next time I make this. Good, simple and easy dish for a busy day. Serve it with a side of garlic bread please

I purchased the specific type of cheese for this recipe, not only did the cheese smell like old sneakers, the cheese had an odd (acquired) taste that I didn’t like.
Super quick and easy. I added veggie sausage for some extra protein. If you’re not a fan of goat/sheep’s milk cheese this dish may not be for you. I’m sure you can sub in some other type of cheese, but it will definitely change the flavor
Comes together very nicely. It’s very easy. Wasn’t a fan of this type of cheese. But that is just my personal taste. The recipe is great and I’ll just use my own favorite cheese next time.

I’ve made this several times and absolutely love it. The cheese is pricey, but worth it. The only thing that I would disagree with is the length of time to truly caramelized the onions – it takes me at least half an hour. That aside, this dish is simple and delicious. We serve it with some grilled Italian sausage. 🙂
