Pasta With Turkey Meatballs

Ingredients

  1. Kosher salt
  2. 12 ounces orecchiette pasta
  3. 2 bunches broccolini, cut into bite-size pieces
  4. 8 ounces sweet Italian turkey sausage, casings removed
  5. 1/4 cup extra-virgin olive oil, plus more for drizzling
  6. 4 cloves garlic, thinly sliced
  7. Pinch of red pepper flakes
  8. 1 large egg
  9. Freshly ground pepper
  10. 1/2 cup grated ricotta salata or parmesan cheese (about 2 ounces)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the broccolini during the last 2 minutes of cooking. Reserve 1 cup cooking water, then drain the pasta and broccolini. Meanwhile, roll the sausage meat into about 20 small meatballs. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the meatballs and cook, turning occasionally, until browned and cooked through, 5 to 6 minutes. Drain on paper towels. Pour off any drippings from the skillet, then add the remaining 3 tablespoons olive oil, the garlic, red pepper flakes and 1/2 teaspoon salt. Cook over medium heat, stirring, 1 minute. Add the pasta, broccolini and meatballs. Whisk the egg with the reserved cooking water in a small bowl, then add to the skillet and stir until the sauce thickens slightly. Season with salt and pepper. Divide the pasta among bowls. Sprinkle with the cheese and drizzle with olive oil.

This dish is really good.  I only had one bunch of broccolini, and I wished I had two, because it really added to the dish.  The star of the dish was definitely the sausage.  I would definitely make this again because it was stupid easy and very tasty.

We put in some sun dried tomatoes and used organic grass fed beef vs Italian sausage-amazing!! Added roasted red peppers and broccoli i can’t tell you how rich and yummy the egg and water made it -wow! Oh and I’m carb consciously spiraled raw zucchini when you throw in the cooked meatballs and before egg and water

I have made this several times and we enjoy the flavors. A mistake last time – I made the meatballs too large and then over cooked them. Ground turkey is more delicate than I thought! My local grocery is making it difficult to find oricchiette pasta so I substitute some other small, interesting type.

This is simply scrumptious! I use broccoli florets and stems rather than broccolini as I can’t find that in my area. I also make my own turkey sausage meatballs from scratch. No casings to deal with and I can adjust my seasonings to our liking. Also, I reserve more than 1 cup of pasta liquid and add more if needed. It is also deelish the next day. I add a little olive oil and lemon juice after heating it up as it tends to dry out over night. The lemon juice makes it really POP!! One of our “go to” recipes!!!

My whole family loved it. Took the time to make little meatballs from trader joes chicken Italian sausage and am glad I did. Easy to make and the kids ate it up, means it’s a winner in my book.
