Mac and Cheese Dog Casserole

Ingredients

  1. 1 pound elbow macaroni
  2. Salt
  3. 2 tablespoons extra-virgin olive oil, divided
  4. 1 package beef or pork hot dogs, chopped into 1-inch pieces
  5. 1 tablespoon butter
  6. 1 medium onion, finely chopped
  7. 2 tablespoons all- purpose flour
  8. 1/2 cup beer, 1/3 of a bottle – whatever you have on hand, chicken broth can be substituted
  9. 2 cups milk
  10. Pepper
  11. 1 rounded tablespoon spicy mustard
  12. 2 rounded tablespoons ketchup
  13. 3 cups yellow sharp Cheddar, shredded, divided (Buy preshredded cheese. You will need 1 1/2 sacks of 10-ounce packages.)

Instructions

  1. Boil a large pot of water for macaroni. Salt water and under cook macaroni, cook about 7 minutes until just under al dente in doneness.
  2. Preheat broiler and set rack 12 inches from heat.
  3. While pasta works, heat a large deep nonstick skillet over medium-high heat. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, then add hot dogs and brown on both sides, 4 minutes total. Remove the dogs with a slotted spoon to a paper towel lined plate. Add another tablespoon extra-virgin olive oil, 1 turn of the pan, and the butter. When butter melts, cook onions 4 to 5 minutes, then add flour and cook another minute. Add beer and cook off completely, 1 minute. Whisk in milk and bring to a bubble, then season the sauce with salt and pepper and stir in the mustard and ketchup. Lower heat and add 2 cups of the cheese. Stir to melt, 1 minute. Adjust mustard, ketchup, and salt and pepper, to your taste.
  4. Drain pasta well. Combine pasta and hot dogs with sauce and coat evenly then pour into large casserole and top with remaining cheese. Melt and brown cheese under broiler, 2 minutes. Serve.

This was good. At the end, I topped the dish with buttered panko crumbs and baked it for 10-15 minutes to get a nice crust on top. Much more elegant looking than you would expect for the dish. Yum!

We’ve been making this for years. All the adults love it. It’s not our favorite mac n cheese but second place. My husband hates ketchup so i use half the amount but he asks for this regularly. Loved by grandmas to kids! If you want a creamier casserole don’t bake it. We’ve never had problems with being greasy. Don’t omit the beer! Seasoning profiles are personal, so season to your taste.

My wife is gluten free so I made some substitutions, namely gluten free pasta and either potato flour or tapioca flour.  I used both in separate recipes.  I made the dish twice. First time with 8 year old cheddar and followed the recipe. But it was too strong. The mustard also was too strong.  Second time made with 12 oz. Spaghetti noodles, Colby and cheddar jack cheese mingling parm on top at the end. Also, no mustard and 2 tablespoons of bbq sauce instead of ketchup. Also this was gluten free with gluten free noodles and 2 tablespoons tapioca starch instead of flour.  Neither time did I use beer because I couldnt find a gluten free brand.  But the chicken broth worked fine.  Experiment with this recipe it is fun.

Needs a lot more seasoning and make sure you use a heavier beer. I used a “light” beer and there was very little flavour from it. Good sold kiddie friendly dinner though.

Really good and a nice change from “traditional” mac and cheese.  The beer (only 1/2 cup) was like a beer-cheese sauce and very compatible with hot dogs (I used Nathans brand).  Not greasy at all.  I subbed bottled chili sauce for the ketchup – highly recommend.  I gave half to my neighbors (two guys who watch a lot of football) and they loved it, too.
