Linguine with Anchovy and Walnuts

Ingredients

  1. Salt
  2. 1 pound linguine
  3. 1/2 cup extra-virgin olive oil
  4. 1 teaspoon Calabrian chile paste, or more if desired
  5. 1/2 teaspoon colatura di alici di Cetara or fish sauce
  6. 1 anchovy fillet, finely chopped
  7. 1 cup freshly grated Parmigiano-Reggiano
  8. 1 cup baby arugula, roughly chopped or torn
  9. 1/2 cup mint leaves, roughly chopped or torn
  10. 1/2 cup walnuts, toasted and chopped

Instructions

  1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until al dente, 8 to 10 minutes. Reserve 1 cup of the pasta water and drain well.
  2. In a large bowl, whisk together the olive oil, chile paste, anchovy juice and anchovy fillet.
  3. Add the pasta, top with the grated cheese and toss well, adding enough reserved pasta water to create a sauce. Add the arugula, mint and walnuts, and toss well.

Used more anchovy and no salty fish sauce.  OMG it needs garlic Giada, at least I knew to add sliced fresh garlic.  A little pasta water to thicken sauce is okay too.

Good! But if you use regular fish sauce I suggest adding in a couple of
Extra anchovies for the salt. Otherwise it will taste pretty bland.

Thought it was bland so I added garlic and replaced walnuts with fried prosciutto.  I would also cut back on cheese as it made no so great leftovers.  Good if you eat right away.  Overall ok.
