Lemon-Pepper Fettuccine

Ingredients

  1. Kosher salt
  2. 12 ounces fettuccine
  3. 1 tablespoon unsalted butter
  4. 1 large shallot, minced
  5. 1 1/4 cups heavy cream
  6. 1 large egg yolk
  7. 1 to 2 teaspoons finely grated lemon zest
  8. 1/3 cup grated pecorino cheese, plus more for garnish
  9. Freshly ground pepper
  10. Crusty bread, for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook as the label directs. Drain, reserving about 1/2 cup cooking water.
  2. Meanwhile, melt the butter in a skillet over medium heat. Add the shallot and a pinch of salt and cook, stirring occasionally, until lightly golden, about 3 minutes. Whisk the cream, egg yolk and lemon zest in a bowl. Reduce the heat to low and add the cream mixture and cheese to the skillet. Cook, whisking, until slightly thickened, about 2 minutes. Season with salt and 2 to 3 teaspoons pepper.
  3. Add the pasta to the skillet and toss, adding enough of the reserved cooking water to loosen the sauce. Divide among bowls and garnish with more pecorino. Serve with crusty bread, if desired.

Delicious! We used garlic instead of a shallot, added some lemon juice to the pasta, and served it with chicken.

This was one of the best pasta dishes i have ever made. I made the following changes because of Coronavirus outbreak and what I had in the house. Used spaghetti instead of fettuccine. Added 4 large cloves of garlic to shallot mixture after a few minutes of cooking. Added juice from 1 lemon when i added pasta water. Seasoned with 4 teaspoons of pepper, a sprinkle of garlic powder and kosher salt to taste. Sauce was creamy and just perfect. This was FABULOUS and we need FABULOUS just now!!!

Loved it!  I used a lot more pecorino than it called for, used the juice of a whole lemon and less pepper than it called for.  It turned out great.  Delicious!

Absolutely delicious, I added a store bought roasted chicken to add protein and squeezed fresh lemon juice over the top before serving. Used Parmesan instead of pecorino. Cut back a bit on the pepper. Huge success ❤️
