Gina’s Seafood Passion Pasta

Ingredients

  1. 2 tablespoons olive oil
  2. 1 large shallot, chopped
  3. 3 cloves garlic, chopped
  4. Pinch red pepper flakes
  5. Salt
  6. Freshly ground black pepper
  7. 1/4 cup dry white wine
  8. One 28-ounce can crushed tomatoes
  9. 1 pound large shrimp, peeled and deveined
  10. 1 pound dry sea scallops
  11. 2 tablespoons roughly chopped fresh flat-leaf parsley
  12. 1 pound linguini
  13. Grated Parmesan, for serving

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. 
  2. Add the olive oil to a large high-sided skillet over medium-high heat. Add the shallots and garlic and saute until tender and fragrant, 3 to 4 minutes. Stir in the red pepper flakes, salt and pepper. Add the white wine and the crushed tomatoes. Season with salt and pepper and bring to a simmer. Add the shrimp and scallops, cover, and gently simmer for 5 minutes. 
  3. Drain the pasta and add directly to the skillet and toss with the pasta and seafood. Serve sprinkled with chopped parsley and grated Parmesan cheese.

This was very good. I did not cook the shrimp and scallops in the sauce…I pan cooked them first and then put them in the sauce with the noodles and omg!

Loved how simple it was, didn’t take too long but it was full of flavor, Delicious. I changed up a few things, only because I always like to add my own touch. Added a bay leave, 1 teaspoon of tomato paste, and some fresh basil at end. Also used fresh pieces of cod instead of scallops with the shrimp. Next time I will try adding mussels. It’s a keeper!

The only thing that I changed was omitting the tomatoes and adding dried Ancho Chiles…………..It was DeeeeeeeeeeeeeeLish…..

This dish was delicious and simple to put together. I served it with whole wheat spaghetti and my daughter ate her whole bowl and thought it was delicious. She is not a whole wheat fan but the sauce, meat and shellfish were delicious. I added chicken to the recipe but you could really add anything. I plan to try it again with sausage.
