Creamy Arrabbiata Pasta

Arrabbiata is a tomato-based sauce, similar to, but spicier than, marinara. The addition of the Calabrian chiles adds a smoky flavor as well as heat.

Ingredients

  1. 2 tablespoons olive oil
  2. 2 tablespoons salted butter
  3. 4 cups cherry tomatoes
  4. 5 cloves garlic, sliced
  5. 1 small yellow onion, diced
  6. 1 tablespoon jarred Calabrian chiles
  7. Pinch each kosher salt and freshly ground black pepper
  8. 1/3 cup white wine
  9. 1 cup chicken stock
  10. 12 ounces thin spaghetti
  11. 12 ounces cooked Italian sausage links, sliced
  12. 1/2 cup heavy cream
  13. 1/4 cup grated Parmesan, plus extra for garnish
  14. Fresh torn basil leaves, for garnish

Instructions

  1. Heat the olive oil and butter in a large skillet over medium heat.
  2. Add the tomatoes, garlic, onion, chiles, salt and pepper. Cook, stirring, until the onions are opaque and the tomatoes have started to break down, 4 to 5 minutes. Deglaze with the wine, then add the stock and bring to a simmer. Let cook until the mixture thickens slightly, 10 to 15 minutes.
  3. Meanwhile, cook the pasta according to the package instructions until al dente. Drain and set aside.
  4. When the sauce has thickened a little more, add the sausages, cream and Parmesan. Add the pasta and toss to coat. Serve topped with more Parmesan and the basil.

Very good! Definitely have to be careful with those Calabrian chiles- hot! I spiced up three and it was just enough.
Could’ve used more salt but overall this was really good and loved the fresh tomatoes and basil

I made this dish for dinner last night. Both my husband and I loved it! I took Rees recommendation and only added 1 TB of the Calabrian chili. I love heat but if I would have added more than 1 TB it probably would have been too hot. This recipe is a keeper!!!

Oh my goodness it was so quick and so good. I had some smoked sausage so I used it instead of Italian, everything else was as listed on the recipe and in my fridge/pantry. Had to get up in the middle of the night to microwave a small bowl (oh my!)
