When Ree is in a time crunch and needs to get dinner on the table fast, one of her go to shortcuts is store bought rotisserie chicken, which provides about 3 cups of meat. This dish can be made in under 30 minutes and is great for a midweek family meal.

Ingredients
- Kosher salt
- 2 tablespoons salted butter
- 2 tablespoons olive oil
- 6 ounces smoked sausage link, sliced into thin rounds
- 3 garlic cloves, minced
- 1 small green bell pepper, diced
- 1 small red bell pepper, diced
- 1/2 yellow onion, diced
- 1 tablespoon Cajun seasoning
- 2/3 cups chicken stock
- 1/2 cup heavy cream
- 1 1/2 cups pulled rotisserie chicken, dark and white meat
- One 16-ounce package potato gnocchi
- 1/2 cup fresh grated Parmesan
- 1/4 cup chopped parsley
Instructions
- Bring a large pot of salted water to a boil.
- Heat the butter and olive oil in a large skillet over medium-high heat. Brown the sausage rounds on both sides, 3 to 4 minutes. Remove to a plate with a slotted spoon.
- Add the garlic, green bell pepper, red bell pepper and onion to the same skillet and cook until softened, 2 to 3 minutes. Season with the Cajun seasoning and stir. Add the stock, scraping the bottom of the pan, followed by the cream, then the chicken. Bring to a simmer and allow to thicken, about 5 minutes.
- Meanwhile, drop the gnocchi into the boiling water, cooking them until they float to the top, 2 to 3 minutes. Drain and add the gnocchi to the sauce. Add the sausage, tossing to fully coat. Serve in bowls, garnished with the grated Parmesan and parsley.

Excellent dish! Made this for dinner tonight. I had never had gnocchi before. Now I love it! Made exactly as directed. Next time I will add more sausage.
This was good. Filling. Very easy to make and relatively quick. The store didn’t have fresh or frozen gnocchi (wasn’t about to make it on a weekday) so I subbed cheese ravioli which worked well. I’m sure gnocchi would be even better. I used Slap yo Mama Cajun and it was not too salty. I took a star off for the flavor. It was good and I will probably make it again but not mind blown five star serve it company good.
My family liked the recipe. I followed the recipe and used No Salt Cajun seasoning.
Will use a 13 oz package of turkey sausage tonight when I make it again.

This is so good! A real keeper! I would cut down on the cajun seasoning as someone suggested because it is quite salty.
Followed the recipe but used some leftover breaded cutlets. Still fantastic!
My sauce didn’t thicken. I would recommend less Cajun seasoning. The suggested amount made the dish too salty.
Pretty good. BUT DO NOT TOSS THE CHICKEN BONES, use them for stock!!!
