Believe it or not, the star behind this 5-ingredient supper is overcooked broccoli! We over-steam it here to give the broccoli a delicate and creamy texture, making it perfect for mashing, mixing with pasta water and tossing with pasta.

Ingredients

  1. 1 bunch broccoli (about 1 pound), trimmed and cut into large florets
  2. 4 tablespoons (1/2 stick) unsalted butter
  3. Kosher salt and freshly ground pepper
  4. 12 ounces spaghetti
  5. 2 cloves garlic, minced
  6. 2 tablespoons olive oil
  7. 1/2 cup grated Parmesan cheese

Instructions

  1. Set up a steamer basket in a 3-quart saucepan. Add enough water to come up to the bottom of the basket. Bring the water to a boil. Add the broccoli florets to the basket, cover and cook until the broccoli is soft and nearly falling apart but still holds its shape, about 15 minutes.
  2. Meanwhile, bring a large pot of salted water to a boil. Transfer the broccoli to a large bowl. Add 2 tablespoons butter and gently toss; season with salt and pepper, then mash.
  3. Cook the spaghetti according to label directions, then reserve 1 cup cooking water and drain.
  4. In a large skillet, cook the garlic in the remaining 2 tablespoons butter and the olive oil for 30 seconds. Add the mashed broccoli, the Parmesan and half of the reserved cooking water. Cook, stirring, until saucy. Season with salt and pepper. Toss with the spaghetti, adding more cooking water as needed.

it has been my experience with cooking broccoli, and i have steamed a LOT of it. that 15 minute broccoli would not be smash-able. i think so many recipes give shorter cook times than is actually needed, it makes me kind of crazy. if it is suppose to be smash-able and help make a sauce, err on the side of too long, not too short cook time.

I made this tonight and it was DELICIOUS!! I added roasted garlic and herb seasoning when I added the salt, pepper and butter to the steamed broccoli and then mashed. I added some Pinot Grigio wine to the heated EVOO, butter and used 4 minced garlic cloves and used angel hair pasta. This dish came together very easily and didn’t take long. This dish is company worthy!!

It looked good in the photo and tasted ok. But it was time consuming for just ok. The recipe said to stir until saucy. There was no sauce. Just the pasta water seeping out of the other ingredients. So I just let that cook off. Left with broccoli, cheese and garlic . Very tasty, but no sauce! If I were to make it again, I’d add more cheese, and some cream instead of pasta water.

 I thought I would look at the reviews to see if I could get some information whether or not to try this recipe but Nothing is more useless seeing a review with no information whatsoever about what you like or don’t like about the recipe What is the problem  writing a couple of lines to say which how you feel about something.
