Broccoli and Bow Ties

Ingredients

  1. Kosher salt
  2. 8 cups broccoli florets (4 heads)
  3. 1/2 pound farfalle (bow tie) pasta
  4. 2 tablespoons unsalted butter
  5. 2 tablespoons good olive oil
  6. 1 teaspoon minced garlic
  7. 1 lemon, zested
  8. 1/2 teaspoon freshly ground black pepper
  9. 1 tablespoon freshly squeezed lemon juice
  10. 1/4 cup toasted pignoli (pine) nuts
  11. Freshly grated Parmesan, optional

Instructions

  1. Cook the broccoli for 3 minutes in a large pot of boiling salted water. Remove the broccoli from the water with a slotted spoon or sieve. Place in a large bowl and set aside.
  2. In the same water, cook the bow-tie pasta according to the package directions, about 12 minutes. Drain well and add to the broccoli.
  3. Meanwhile, in a small saute pan, heat the butter and oil and cook the garlic and lemon zest over medium-low heat for 1 minute. Off the heat, add 2 teaspoons salt, the pepper, and lemon juice and pour this over the broccoli and pasta. Toss well. Season to taste, sprinkle with the pignolis and cheese, if using, and serve.
  4. To toast pignolis, place them in a dry saute pan over medium-low heat and cook, tossing often, for about 5 minutes, until light brown.

I love this dish! I’m making it tonight. Couldn’t find mezze (small) penne so I got regular penne but that’s ok. I serve it as a main dish & sometimes add sauted shrimp. I find bow ties too doughy.

To those who think there is too much lemon, carefully read the recipe. The zest of “1” lemon but only 1 tablespoon of juice, not the whole thing. This is also served as a side dish, not a main per the video. For a main we add plenty of Parmesan and a little more oil.

To those of you who think this is bland, are you using 1/2 lb of pasta or are you using a 1lb box. That would make a HUGE difference. Because almost all boxes are 1 lbs. I’ve made this over a dozen times and it’s always the one gone at parties.

A very light pasta dish using the bow tie. Marinated the chicken for about 5-7 hours in fridge in a zip lock bag. Grilled on a gas grill and it was a fabulous dinner! (I cut the recipe in 1/2)

Based on the great reviews, I made this NYE among other recipes an it was dry and bland! I even added extra garlic, pepper and parmasan cheese. After serving, we added more olive oil and lots more parmasan. Nope, still bland! Who writes these raving reviews?! Very disappointed! This recipe needs a major revision!
