This turkey meatloaf recipe inspired me to create a healthier version of meatballs. Of course, you can use the mixture to make meatloaf.

Ingredients
- 2 cups water
- 1 (3 ounce) package beef-flavored ramen noodles with seasoning packet
- 1 cup thinly sliced shiitake mushrooms
- ½ cup frozen shelled edamame
- 1 tablespoon reduced-sodium soy sauce
- 2 teaspoons Sriracha sauce, or more to taste
- 4 ounces beef top sirloin, thinly sliced
- 1 tablespoon chopped fresh cilantro, or to taste
Instructions
- Bring water to a boil in a saucepan. Add ramen and seasoning packet; cook and stir for 1 minute. Add mushrooms, edamame, soy sauce, and Sriracha; cook for 1 more minute.
- Add steak and cook until firm and reddish-pink and juicy in the center, 1 to 2 more minutes. An instant-read thermometer inserted into the steak should read 130 degrees F (54 degrees C) for medium-rare.
- Ladle soup into bowls. Garnish with cilantro and add additional Sriracha if desired.

It was bland. If I make it again, I would add garlic and green onions
Great recipe although I did not add the raw sirloin to the pot. I seared it and then added it in which turned out great. I’m not a spicy food person so I didn’t add too much Sriracha however with this dish, the more the better.
Until now, I have never read or followed the instructions on a ramen noodle pkg. nor boiled steak so learned something new on this recipe. Skipped the edamame (didn’t have) but added a TBLS minced onion and 1/3c coleslaw cabbage to the water when I added the noodles (per the pkg instructions). I was surprised how well all of this cooked up, including the steak (which only took a min!!?!). I don’t think boiling the steak was how I would cook it again but this method was very tender. Liked this but would sear the steak, then slice, then add atop my ramen next time. But! I totally think others should at least try this. Green onion or soft boiled egg would also be a great addition. Had fun trying this and it was very quick and easy! Thank you!
Very good, I added napa cabbage and pearl onions then topped it with sliced green onions. Very tasty very filling
Amazing! I added green onions when I added the mushrooms and skipped the edamame. I also added a soft-boiled egg and this was truly better than our local ramen restaurant. Delicious, easy, and just what my under the weather hubby needed (he said I should give this 10 stars).

Wonderful! Ridiculously Easy ! I seasoned the beef with 12 of the Ramen seasoning before dropping it in.
