Instant Pot Penne alla Vodka

a simple method for preparing individual instant oatmeal packets for a quick and filling breakfast. Children love to assist! If you’d like, top with fruit, honey, or raisins! The recipe will be double for my family of 7, and all the filled baggies will be placed in a gallon-sized resealable container for storage. All the youngsters need to do in the morning is microwave the food after adding water and any additional toppings.

Ingredients

  1. 2 tablespoons unsalted butter
  2. 1 tablespoon olive oil
  3. ¾ cup finely chopped yellow onion
  4. 3 cloves garlic, minced
  5. ½ teaspoon crushed red pepper
  6. ½ cup vodka
  7. 2 ½ cups water
  8. 1 (16 ounce) package uncooked penne pasta
  9. 2 teaspoons kosher salt
  10. 1 (28 ounce) can crushed tomatoes
  11. ½ cup heavy cream
  12. ⅓ cup grated Parmesan cheese
  13. ¼ teaspoon ground black pepper

Instructions

  1. Turn on a multi-functional pressure cooker (such as Instant Pot) and select Saute function. Select high temperature setting, and preheat the pot for 1 to 2 minutes. Add butter and oil. Add onion and cook, stirring constantly, until translucent, about 3 minutes. Add garlic and crushed red pepper, and cook, stirring often, for 1 minute.
  2. Pour in vodka and cook until reduced by half, about 3 minutes. Cancel Saute function. Stir in water, penne, and salt. Pour tomatoes over penne; do not stir. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 4 minutes. Allow 10 to 15 minutes for pressure to build.
  3. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Stir in cream and Parmesan cheese; let stand for 3 minutes. Stir in pepper.
  4. You could add shrimp or cooked chicken at the end.

This was both easy and delicious. Will definitely make again. Next time, I may try to add the pepper before the end or slightly reduce the amount, because I could detect a bit more of the black pepper kick than I would expect, but I loved it regardless.

I’m not sure I’ve ever commented on a recipe before, but this one is so worth it. I’ve been using my instant pot for 3 (or so) years now, and this is the first time I cooked pasta in it.
