Grandma’s Beef and Noodle Casserole

Grandma’s finest recipe was this ground beef and noodle casserole, and I always asked for it for my birthday.

Ingredients

  1. 1 (12 ounce) package egg noodles
  2. 1 pound ground beef
  3. 1 green bell pepper, chopped
  4. 1 large onion, chopped
  5. 3 tablespoons all-purpose flour
  6. 2 cups milk
  7. 1 pinch salt and ground black pepper to taste
  8. 1 ¼ cups grated Cheddar cheese, divided
  9. 1 (6 ounce) can chopped olives
  10. 1 (4 ounce) jar chopped pimento peppers

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
  3. Meanwhile, heat a large skillet over medium-high heat. Cook and stir ground beef, bell pepper, and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Stir flour into the drippings in the pan; slowly whisk in milk and season with salt and pepper. Stir in 1 cup Cheddar cheese, olives, and pimentos.
  4. Drain noodles and fold into the beef mixture. Transfer to a casserole dish and cover with remaining cheese.
  5. Bake in the preheated oven until bubbly and cheese is melted and browned, about 40 minutes.
  6. You can use any kind of grated cheese you prefer.

We really liked this recipe. I left out the olives and green pepper though. Green pepper can overpower a dish with little effort, so I left it out. Olives would be too pungent in my opinion. I did add some Monterey jack cheese and that added a nice level of flavor.

This simple yet delicious casserole hits the comfort food spot! It’s a bit time consuming however WELL worth the time. I used Munster cheese on top, as we did not have cheddar. Turned out great and tasted fantastic!

This sounded so good but it was not. I followed the recipe except for leaving out the olives because we do not care for them. The combination of the different foods did not work. Unfortunately we could not eat it.
