Easy Ginger-Scallion Ramen Noodles

Throw away the seasoning packet and cover the quick noodles with your own sauce. For a complete dinner, I like to add a fried egg and some Sriracha to mine.

Ingredients

  1. 6 scallions, chopped
  2. 1 tablespoon peeled and grated fresh ginger root
  3. 1 tablespoon toasted sesame oil
  4. 2 teaspoons soy sauce
  5. 1 teaspoon rice wine vinegar
  6. 3 (3 ounce) packages ramen noodles, without flavor packets

Instructions

  1. Combine scallions, ginger, sesame oil, soy sauce, and rice wine vinegar in a bowl. Stir until combined and refrigerate for 10 minutes.
  2. Bring a large pot of water to a boil. Add noodles and boil for 3 minutes. Turn heat off and let sit for 1 minute.
  3. Drain noodles and transfer to a large bowl. Add reserved sauce mixture and toss to coat.
