Ingredients
- 1 large head cauliflower
- 3 tablespoons good olive oil
- Kosher salt and freshly ground black pepper
- 1 cup freshly grated Parmesan cheese (2 ounces)
- 1 cup freshly grated Gruyere cheese (2 ounces)
Instructions
- Preheat the oven to 350 degrees.
- Remove the outer green leaves from the cauliflower and cut the head into florets, discarding the stems. Place the florets on a sheet pan. Drizzle with olive oil and sprinkle generously with salt and pepper. Toss well. Bake for 30 minutes, tossing once, until the cauliflower is tender and starts to brown. Sprinkle with the Parmesan and Gruyere and bake for 1 to 2 more minutes, just until the cheese melts. Season to taste and serve hot or warm.

I added a little truffle oil – amd only used parm-regg. Amazing!
I think my family would have liked it better with just parmesan or gruyere.. we didn’t like both cheeses in this dish
This was quick and easy and yummy. I added cooked peas to the serving bowl after the cauliflower came out of the oven to add a little green. Also, i used spray evoo which made it super easy and zero mess. Even cauliflower nay-sayers loved it!
Either I had a smaller head of cauliflower or too much oil, but I would have used slightly less oil.
Not the recipe’s fault. It was perfection.
We now have a favorite way to cook cauliflower! Easy enough to trim calories by omitting half the cheese- and will still be delicious! Thanks Ina!
