Ingredients
- 1/2 cup loosely packed fresh basil leaves
- 1/4 cup loosely packed fresh parsley leaves
- 4 scallions, green parts only, coarsely chopped
- 1/4 cup finely grated Parmesan
- 2 oil-packed anchovy fillets, drained
- 1/2 cup mayonnaise
- Freshly ground black pepper
Instructions
- In a food processor, pulse the basil, parsley and scallions until finely chopped. Add the cheese and anchovies and process to a paste consistency. Add the mayonnaise and puree until smooth. Season with pepper.

So delicious on corn and on yellow squash after grilling. I’m thinking this will be good on a tomato sandwich also!
Instantly became a favorite. Delicious complex flavors. Mixed with cooked fresh broccoli florets, it was great, but I can think of a myriad of uses. For smaller quantities, can use splash of worcestershire instead of opening a tin of anchovies, but go for the anchovies for that umami pop.
I saw this last week and left for the farmers market right after the show. This mayo is MIND BLOWING! Insanely easy to make and really yummy on corn and all other veggies! My vegetarian friend loved it!!
