Honey Nut Panna Cotta

Ingredients

  1. One 1/4-ounce packet unflavored gelatin
  2. 1 cup heavy cream
  3. 1 cup whole milk
  4. 1 cinnamon stick
  5. 1 teaspoon vanilla extract
  6. 1/4 cup amber honey
  7. 1 cup honey-flavored breakfast cereal, such as Honey Nut Cheerios
  8. 1 1/2 cups full-fat Greek yogurt
  9. 1 pint strawberries, hulled and quartered
  10. 1 tablespoon sugar
  11. 1 tablespoon lemon juice (1/2 lemon)

Instructions

  1. Dissolve the gelatin in 2 tablespoons warm water and set aside to bloom.
  2. In a small skillet over medium heat, bring the gelatin mixture, cream, milk, cinnamon, vanilla, honey and cereal to a simmer. Remove from the heat and let steep for 5 minutes to marry the flavors.
  3. Place the yogurt in a large bowl. Strain the milk mixture over the yogurt and whisk to combine. Divide among eight 1/2-cup parfait glasses or ramekins and chill for at least 2 hours.
  4. Combine the strawberries, lemon juice and sugar in a small bowl, and let macerate while the panna cotta sets.
  5. Serve the panna cotta with the macerated berries.
