Ingredients
- 2 tablespoons butter, softened
- 2 slices hearty bread
- 2 tablespoons store-bought pesto
- 2 slices mozzarella cheese
- 1 tomato, sliced
Instructions
- Special equipment: a waffle maker
- Preheat a waffle maker to the regular setting according to the manufacturer’s instructions.
- Butter each piece of bread on 1 side. Flip 1 piece and spread the non-buttered side with pesto. Top with the sliced mozzarella and tomatoes and lay the second piece of bread on top buttered-side up. Place on the waffle maker, close the lid and cook until melted and golden.

I used an approach like yours to take the leftover part of an Italian hoagie and turn it into a panini. Works best with enough cheese in the leftover.
Didn’t work for me. Big mess and not the best.
We LOVED this! But we just made the sandwich in our cast iron skillet. Will definately make again!!!
Love the idea of a quick Panini with easy ingredients always on hand.
This was fun to make & the sandwich turned out just as shown on the program. I don’t think the brand of waffle maker matters. Mine is just an inexpensive one. Also, mine ‘clamps’ shut. I don’t think we need to do that, I then just placed the lid down as a regular panini press does. The pressure of the lid, makes it just right. Hope that helps.
Which make of waffle maker did you use. I didn’t catch it if you mentioned it on the show.
