Spinach-Artichoke Panini Bites

Ingredients

  1. 4 ounces cream cheese
  2. 1 tablespoon sour cream
  3. 1 clove garlic, smashed
  4. 1/2 teaspoon grated lemon zest (from 1/2 lemon)
  5. 1/4 teaspoon kosher salt
  6. One 10-ounce package frozen spinach, thawed and squeezed dry
  7. 1/2 cup marinated artichoke hearts, drained
  8. 1/2 cup grated mozzarella
  9. 1/4 cup freshly grated Parmesan
  10. 1/2 cup mayonnaise
  11. 12 slices white bread

Instructions

  1. Put a rimmed baking sheet in the oven and preheat to 450 degrees F.
  2. Combine the cream cheese, sour cream, garlic, lemon zest, salt, spinach and artichoke hearts in a food processor. Pulse until evenly combined. Add the mozzarella and Parmesan; pulse to combine.
  3. Spread 1/4 cup of the mayonnaise over half of the bread slices. Place the slices, mayo-side down, on a second rimmed baking sheet and spread evenly with the spinach filling, all the way to the edges. Top with the other 6 slices of bread. Spread the top slices with the remaining 1/4 cup mayonnaise. Carefully, remove the hot baking sheet from the oven and place it directly on top of the sandwiches. Transfer the double-stacked baking sheets to the oven and bake until the sandwiches are golden brown and the filling is melted, about 15 minutes.
  4. Let sit for 5 minutes before slicing into bite-size squares or triangles. Serve warm.

I followed the recipe to the T but found it flavorless. Very surprised it being Giada’s.

I followed the recipe and cooking instructions to the letter, but while the bread did get brown, it never got crisp or toasted so the sandwiches were soggy. However the flavors were really good so I will make it again but I’ll grill it on the stove to ensure the bread is crisp on the outside.

Easy and quick to make. The only tweak I made was I only put them in the oven for 5 mins. Other than that I followed the recipe exactly and I will be making them for our next party. Loved them!!

These were delicious but next time I would cook them for a little less time.  I gave them the full 15 minutes and some of them had burnt edges.  Will probably check them after 10 minutes the next time I make them.   I had enough filling to make 7 sandwiches, rather than 6.  Also, I cut them into smaller pieces and served them as part of an appetizer buffet.

The filling had great flavor but I could have made twice as many sandwiches. Also they took close to 25 minutes in my convection oven to get the bread fully toasted. But I will definitely make again for a party, just know that I need to adjust timing.
