Sausage Apple Pancakes with Walnut Butter

Ingredients

  1. 1 cup flour
  2. 1/4 cup yellow cornmeal
  3. 1 teaspoon baking powder
  4. 1/2 teaspoon baking soda
  5. Salt
  6. 1 1/3 cups low-fat buttermilk
  7. 1 large egg, lightly beaten
  8. 3 tablespoons maple syrup, plus more for serving, optional
  9. 1/2 cup diced apples
  10. 3/4 cup Jimmy Dean(R) Hearty Original Sausage Crumbles
  11. 2 tablespoons butter, for greasing griddle
  12. Cinnamon Walnut Butter, recipe follows
  13. 1 stick unsalted butter, softened
  14. 2 tablespoons toasted walnuts, finely chopped
  15. 2 tablespoons maple syrup
  16. 1/2 teaspoon ground cinnamon
  17. 1/2 teaspoon vanilla extract
  18. Pinch of salt

Instructions

  1. In a small bowl, combine the flour, cornmeal, baking powder, baking soda, and 1/2 teaspoon salt. 
  2. In a large measuring cup combine the buttermilk, egg, and 3 tablespoons maple syrup and stir with a fork. Stir into the flour mixture with a spatula until just combined. Mix in the diced apple and sausage crumbles. 
  3. Heat a pancake griddle over medium-low heat and then grease with a small amount of butter. Drop ladles of batter to form 4-inch pancakes, cooking pancakes for 2 to 3 minutes before flipping, or until the batter puffs up and bubbles form. Flip pancakes and continue to cook for an additional 1 to 2 minutes, until cooked through and nicely browned. Top with Cinnamon Walnut Butter and additional maple syrup, if desired.
  4. Combine the butter, maple syrup, cinnamon, vanilla, and salt in a bowl and mix until well blended. Serve with pancakes.
