Ingredients

  1. 1 teaspoon dried ancho chile powder
  2. 1 teaspoon dried guajillo chile powder
  3. 1 teaspoon garlic powder
  4. 1 teaspoon sea salt
  5. 1 cup shredded Monterey Jack cheese
  6. 1/2 cup chopped onion
  7. 1/3 cup blue crab meat
  8. 1/3 cup chopped cooked Spanish octopus
  9. 1/3 cup chopped boiled shrimp
  10. 1/4 cup chopped fresh cilantro
  11. 1/4 cup chopped jalapeno
  12. 1 dozen oysters on the half shell

Instructions

  1. Preheat a grill for high heat.
  2. Mix the ancho and guajillo chiles, garlic powder and salt in a bowl and set aside. Combine the cheese, onion, crab, octopus, shrimp, cilantro and jalapeno in a bowl, then add the seasoning mix. Top the oysters with the stuffing. Put the oysters on the grill and cook, covered, until cooked through, 4 to 5 minutes.
