Sour Cream and Onion-Onion Rings

Ingredients

  1. Neutral oil, for frying
  2. 1/2 cup store-bought dried sour cream and onion dip mix
  3. 4 teaspoons onion powder
  4. 1 teaspoon garlic powder
  5. 1 1/4 cups (150 grams) all-purpose flour
  6. 1/2 cup (60 grams) cornstarch
  7. 1 teaspoon kosher salt
  8. 1 teaspoon baking powder
  9. 1 cup chilled seltzer water
  10. 1/2 cup (120 grams) sour cream
  11. 1/2 cup (18 grams) chopped chives
  12. 2 large yellow onions, sliced into 1/2-inch-thick rings and separated
  13. Ketchup, for serving

Instructions

  1. Heat 2 inches of oil in a Dutch oven to 370 degrees F.
  2. Whisk together the sour cream and onion dip mix, 2 teaspoons of the onion powder and 1/2 teaspoon of the garlic powder in a large bowl (large enough to use for dredging). Set aside 2 tablespoons of the seasoning mixture for later. To the mixture in the bowl, stir in 1/4 cup of the flour. Set aside.
  3. In a separate large mixing bowl, whisk together the remaining 1 cup flour, the cornstarch, remaining 2 teaspoons onion powder, the salt, baking powder and remaining 1/2 teaspoon garlic powder. Add the seltzer and sour cream and whisk until just smooth. Stir in the chives. The batter should be the consistency of thick paint.
  4. Add the onion rings to the seasoned flour and toss to lightly coat. Working in 2 batches, dredge the floured rings in the batter, letting the excess drip back in the bowl, and add to the oil. Fry, flipping occasionally, until very crisp and deep golden, about 4 minutes per batch. Drain on a wire rack set over a baking sheet.
  5. While still hot, season the onion rings with the reserved sour cream and onion seasoning mixture. Serve immediately, with ketchup.

O…M…G! This is by far the best batter for frying that I have ever used. The onion rings came out perfectly and were still crispy a half an hour out of the fryer. They may have stayed crispy even longer than that, but since we ate them all…who knows. I can’t wait to fry up some fish with this batter. Outstanding!!!
By the way, I purchased a jar of sour cream powder on amazon and just added minced onion and garlic and it worked like a charm.

These were so delicious! I couldn’t stop eating them. I used Pampered Chef’s French Onion Dip Mix and I used it to make a little dipping sauce with sour cream too. The best onion rings EVER!

I hate frying anything. HATE IT. But I had to try these, and I’m so glad I did. They are simple and totally delicious. I subbed a packet of dill ranch mix bc I couldn’t find sour cream & onion mix and didn’t want to wait to order it. Worked great. Just be careful, they are addictive!
