Baked Onion Rings

Ingredients

  1. 1 large sweet onion, sliced into 1/2-inch rounds
  2. 1 cup nonfat buttermilk
  3. 1/4 cup cornstarch
  4. 1/3 cup all purpose flour
  5. 3/4 cup yellow cornmeal
  6. 1/4 finely grated Parmesan cheese
  7. 1 Tablespoon Miss Brown’s House Seasoning (recipe follows)
  8. Olive oil cooking spray
  9. 1 teaspoon garlic powder
  10. 1 teaspoon onion powder
  11. 1 teaspoon sweet paprika
  12. 1 teaspoon kosher salt
  13. 1 teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 425 degrees F. Line two baking sheets with parchment paper. Lightly spray the parchment paper with olive oil cooking spray.
  2. Stir together the buttermilk and cornstarch in a shallow bowl.
  3. Stir together the flour, cornmeal, Parmesan cheese and House seasoning in a baking dish.
  4. Coat the onion slices by placing each slice into the buttermilk mixture allow excess to drip before coating in the seasoned cornmeal. Then place the coated rings in a single layer on the baking sheets. Repeat until all onion rings are coated. Give the onion rings a light spray with non-stick baking spray. Bake until golden brown, about 20-25 minutes flipping once halfway through and serve hot.
  5. Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

These were delicious! I followed the recipe as is and it was very good. I did bake a bit longer to get the rings crispier. I like how they were crispy and not oily feeling as you bit into them. I will definitely make again!

Outstanding. So satisfying. I did the spice blend x4. I serve with 2 dips…cocktail sauce & also a home blender of raw cashews, stone ground mustard & a touch of maple syrup. I liked these, however, I felt they needed more seasoning. I put the entire tablespoon of her house seasoning in but they were rather bland. I will try them again with more house seasoning.

You cannot slice these thin. The thinner ones I made burnt but the thicker ones I made turned out fine.

These were really good! I mistakenly cooked some double onion rings (instead of single), and they were actually better that way. Much juicier and kept it from being as dry. Thank you Kardea!

Great healthier option for onion rings. Loved the flavor! Will definitely make again. Might try cooking in the air fryer for extra crispiness if making a small batch.

I had high hopes, but the rings were “powdery” because there was not enough moisture in the breading is the best way to describe it. Waste of time and ingredients.
