Pickled Red Onions

Sweet-and-tangy quick pickled onions are a go-to condiment for burgers, tacos, salads or sandwiches—basically anywhere you need a pop of flavor and some bright color. And talk about easy: You’ll need just four pantry ingredients, and your pickles will be ready in minutes, no long brining, chilling or canning required.

Ingredients

  1. 1 medium red onion, halved and thinly sliced (about 2 cups)
  2. 1/4 cup apple cider vinegar
  3. 2 tablespoons packed light brown sugar
  4. 1/2 teaspoon coriander seeds, lightly crushed
  5. Kosher salt and freshly ground black pepper

Instructions

  1. Put the onions in a medium bowl. Combine the vinegar, sugar, coriander, 2 teaspoons salt and a few grinds of pepper in a small saucepan and bring to a simmer over medium heat. Cook until the sugar dissolves, about 1 minute. Pour the mixture over the onions, cover and set aside until cooled to room temperature.

I made this and thought I was going to be the only one to eat them but my family loved the pickle onion so I make them all the time. I do canning so I’m going to try to canned them so they will stop worrying me so . I usually don’t write a review so I really like this

Used only 1 tsp. of kosher salt and it was still too salty. Will cut to 1/2 next time. Also only used 1 T. brown sugar. I rinsed the onions first to make it milder. The coriander seeds gave it a nice flavor.

Made this with my daughter in law the day after Thanksgiving to add to our turkey sandwiches. It was so simple to put together and really added a pop to the sandwich’s. Will definitely make this again.

So simple! I used half a very large red onion and ground coriander, half the amount, as that was what I had. Everything else I did exactly the same. It did seem like too little liquid, however, after marinading, it was the right amount. It ended up fitting packed into a small jelly/ball jar once pickled.
