Ingredients
- 1 medium red onion, halved and thinly sliced (about 2 cups)
- 1/4 cup apple cider vinegar
- 2 tablespoons packed light brown sugar
- 1/2 teaspoon coriander seeds, lightly crushed
- Kosher salt and freshly ground black pepper
Instructions
- Put the onions in a medium bowl. Combine the vinegar, sugar, coriander, 2 teaspoons salt and a few grinds of pepper in a small saucepan and bring to a simmer over medium heat. Cook until the sugar dissolves, about 1 minute. Pour the mixture over the onions, cover and set aside until cooled to room temperature.

I made this and thought I was going to be the only one to eat them but my family loved the pickle onion so I make them all the time. I do canning so I’m going to try to canned them so they will stop worrying me so . I usually don’t write a review so I really like this
Used only 1 tsp. of kosher salt and it was still too salty. Will cut to 1/2 next time. Also only used 1 T. brown sugar. I rinsed the onions first to make it milder. The coriander seeds gave it a nice flavor.

So good on a burger (regular or black bean), salad, or tuna sandwich!
Made this with my daughter in law the day after Thanksgiving to add to our turkey sandwiches. It was so simple to put together and really added a pop to the sandwich’s. Will definitely make this again.

These onions have become a staple in our house. No salad is complete without them. They also make a great little gift in a cute jar!
So simple! I used half a very large red onion and ground coriander, half the amount, as that was what I had. Everything else I did exactly the same. It did seem like too little liquid, however, after marinading, it was the right amount. It ended up fitting packed into a small jelly/ball jar once pickled.
Great base recipe. I used pickling spices instead of the coriander.
