Baked Chickpea Patties with Cucumber and Tahini

Chickpea patties laced with cilantro, onion, garlic and cumin crisp up in the oven with a light brush of olive oil. A nod to falafel, these patties are accompanied by pita, vegetables and tahini.

Ingredients

  1. 1 large bunch fresh cilantro (about 3 cups leaves)
  2. 1 onion, thinly sliced (about 1 1/2 cups)
  3. 3 cloves garlic
  4. 1 teaspoon ground cumin
  5. Kosher salt and freshly ground pepper
  6. 1 15-ounce can chickpeas, drained and rinsed
  7. 1/3 cup plus 2 tablespoons tahini
  8. 1/4 cup panko breadcrumbs
  9. 2 tablespoons extra-virgin olive oil
  10. Juice of 2 lemons
  11. 5 Persian cucumbers, thinly sliced
  12. 2 to 3 pieces pita bread, cut into quarters

Instructions

  1. Put a baking sheet on the middle oven rack and preheat to 450 degrees F. Pulse 2 cups cilantro, 1 cup onion, the garlic, cumin, 1/2 teaspoon salt and a few grinds of pepper in a food processor until finely chopped. Add the chickpeas and 2 tablespoons tahini; pulse to make a chunky paste. Scrape the mixture into a bowl and stir in the panko.
  2. Form the chickpea mixture into twelve 2-inch patties (about 2 tablespoons each). Remove the baking sheet from the oven, brush with 1 tablespoon olive oil and add the chickpea patties. Bake, flipping the patties and rotating the pan halfway through, until golden and crisp, 20 to 25 minutes.
  3. Meanwhile, mix the remaining 1/3 cup tahini with 6 tablespoons warm water and the juice of 1 lemon in a small bowl until creamy (it may look separated at first but it will come together). Season with salt and pepper; set aside. Toss the cucumbers with the juice of the remaining lemon, 1 cup cilantro, 1/2 cup sliced onion and 1 tablespoon olive oil in a medium bowl; season with salt and pepper.
  4. Warm the pita in the oven. Serve the falafel with the cucumber salad, pita and tahini sauce.

Absolutely delicious! And super simple to make. The patties were a little hard to form, as the chickpea mixture was wet and sticky. However, the end result was spectacular! I made sandwiches with the pita and tahini, cucumber, onions and tomato! So good

Easy and delicious! My “paste” turned out really wet, so I used a cookie scoop to get the falafels on the tray and then flattened them with a spoon. They stayed moist and delicious! I used GF panko which worked out great. That tahini was a bust! Im thinking there must be an error in the recipe? There’s more liquid than tahini (6T water + juice of one lemon)! It turned out to be tahini water! The falafels were a HUGE hit with my middle-schooler though, so I will definitely make again!

Love this, it was super easy and came together quickly. I didn’t care for the sauce so next time I’ll do hummus on the side instead. However the falafel was great. After reading a few reviews I added a little dash of olive oil to the falafel mixture before forming into balls. I didn’t think they were dry at all.

The flavor of these patties was pretty good but they were very dry. With lots of the sauce they are edible. I love falafel and hate the mess of frying so I will probably make these again. Might try adding an egg or olive oil to the mixture.

The flavor of these felafels are excellent! Make sure to press the patties together real well so they are less likely to fall apart. Mine fell apart a bit but they were still delicious. This is going in my saves for great meatless meals.
