Ingredients
- 2 tablespoon unsalted butter
- 4 large eggs, beaten
- Splash whole milk
- Kosher salt and freshly ground black pepper
- 1 tablespoon canned green chiles, optional
- 1 tablespoon jarred diced pimientos, optional
- 2 slices regular white bread
- 2 slices pepper jack cheese, optional
- Ketchup or spicy mustard, for serving, as desired
Instructions
- Place a large (about 12-inch) nonstick skillet over medium heat, then add the butter and allow it to melt. Meanwhile, mix the eggs, milk, a pinch of salt and pepper, plus the green chiles and pimientos, if using, in a small pitcher. Pour into the skillet. Add the bread to the eggs, quickly coating the first side of the bread in the eggs (as you would French toast), then turn it over, placing it back in the eggs.
- Allow the eggs to almost set completely, about 2 minutes. Using a spatula, flip the whole omelet over in one motion. Top each piece of bread with the cheese, if using. Fold the side edges of the omelet over the bread, then flip one piece of the bread onto the other, creating a sandwich. Allow the bottom of the sandwich to become toasted and golden, about a minute, then flip the sandwich over and cook until the other side is nice and golden, an additional minute.
- Remove from the skillet and cut in half. Serve with ketchup or spicy mustard if desired.

Great recipe. Love the dogs! Their home is always immaculate. Having a pet is reality for many people. We were so glad to see a loving family, and not seeing constant paranoid hand-washing on air. The recipes today are fun for the kiddos.
Made this tonight for my grandkids. They really liked it. I started off with three Jumbo eggs, but added another one, which had a double yolk, and it still needed more eggs as there wasn’t enough to flip the right and left sides over onto the bread slices. I used a 12” non-stick skillet. I thought maybe a smaller skillet would give me more egg around the sides, but I’m not sure there wouldn’t be enough room for the egg to spread along the sides of the slices. I did flip the bread onto the other slice of bread so it did make the sandwich well enough, It just did not have the layers that Ree was able to accomplish. Used ketchup on the omelette before I flipped the bread slice onto the other slice. Cute idea.
I saw this episode and i was totally against her cooking and playing with the dog that just came in from outside or playing with animals period while you cook. It’s her house and she will be the only one eating the food but she may be an influence to some and she should be more considerate and cleaner and not cook her food and rub on the dogs. JMO
I’m not going to rate this recipe but have to say…her petting the dogs (several times) while cooking and never showing her wash her hands turned me off. I love my pets but I gotta wash my hands all the time when cooking.
