Fried olives make an unexpected and elegant nibble for a party. They are perfect for the holidays but also on a summer evening with a glass of wine. Ree sprinkles hers with parsley, but you could serve with a dipping sauce of marinara or sprinkle over some grated Parmesan.

Ingredients

  1. Oil, for frying
  2. 1 cup blue cheese stuffed olives
  3. 1 cup garlic stuffed olives
  4. 1/3 cup all-purpose flour
  5. 2 large eggs, beaten
  6. 1 1/2 cups panko breadcrumbs
  7. 1 tablespoon Italian seasoning
  8. 1/2 teaspoon crushed red pepper flakes
  9. Chopped fresh parsley, for garnish

Instructions

  1. Heat 2 inches of oil in a heavy-bottomed pot to 350 degrees F.
  2. Dry the olives on a paper towel lined sheet pan. Add the flour, eggs and panko breadcrumbs to three separate shallow dishes. Season the breadcrumbs with the Italian seasoning and crushed red pepper flakes.
  3. Bread the olives by dredging a few in the flour, coating them completely, then dipping in the eggs, then coating in the breadcrumbs. Set aside and repeat with the remaining olives.
  4. Working in a few batches, fry the olives in the hot oil until crispy and golden, 1 to 2 minutes. Remove them to a wire rack over a paper towel lined sheet tray. Continue to fry the remaining olives.
  5. Transfer the cooked olives to a serving platter and sprinkle with the parsley. Serve with toothpicks on the side.

I made them with green olives with the red in middle. I didn’t have stuff olives. I dipped them in homemade blue cheese dressing.

Delicious snack. I purchased olives stuffed with garlic and jalapeño. This brand of olives were saltier than most so I rinsed them a bit to get rid of some of the salt. I added smoked paprika and garlic powder to my egg mixture but I think I will add it to the panko crumbs next time. Fried for about a minute a side but eyeballed them until they were nice and brown. They are super hot after frying so be careful when eating. Even when I thought they had cooled enough they were still pretty hot. They are definitely addictive as Ree noted.

Yes I made this recipe today. I thought it was horrible. A lot of work for a hard tasteless olive. And the garlic had a clove of garlic just sitting there- Yuk! Not even really worth one star.

There is a restaurant in Napa close to me Bistro Don Giovanni that offers fried olives off the menu have to ask for them. Stuffed with anchovies the few times I tried them. Will try this variation
