Sweet and Savory Oatmeal Bake

Ingredients

  1. 1 cup steel-cut oats
  2. 1/2 cup chopped toasted walnuts
  3. 1/4 cup unsweetened shredded coconut, toasted
  4. 1/2 teaspoon kosher salt
  5. 1 large egg
  6. 2 cups milk
  7. 1/2 cup firmly-packed brown sugar
  8. 1/4 cup extra-virgin olive oil
  9. 1 cup diced apple (about 1 medium apple)
  10. 1/4 cup chopped cooked bacon (preferably maple-smoked)

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Stir together the oats, walnuts, coconut and salt in a large bowl to combine. In a separate bowl, lightly beat the egg, then stir in the milk, brown sugar and olive oil. Stir the wet ingredients into the dry ones and stir to combine. Add the apple and bacon to the mixture and stir to evenly distribute.
  3. Pour the oat mixture into an 8-by-8-inch baking dish. Cover loosely with foil and bake in the center of the oven for 30 minutes. Uncover and bake an additional 30 minutes. Serve hot, scooped into bowls, or let cool completely to room temperature and cut into squares for serving.

This was delicious and so easy. I was worried that it might stick to the baking dish, so sprayed it with cooking spray first. I added cinnamon; next time I will also add vanilla. The apples seemed to float to the top, so once it was baked I stirred it, then smoothed the top. Once cooled, it could be cut and then frozen into individual portions.

Very tasty and great textures;but a bit too sweet. I would use 1/3c. Next time I will substitute maple syrup in place of the brown sugar – healthier.

This recipe is excellent. I always make a recipe the first time following the exact recipe. Then I evaluate other additions that could work. This recipe is perfect as is. It is also so great that you can easy alter to add your own favorite flavors. I have made a carrot cake version with shredded carrots, coconut and cinnamon, an apple cinnamon, and a coconut and pecan. This recipe is full proof and very versatile. Thank you Sunny!

This was so good. I used almonds with the coconut and apples. I added a little lemon zest. This came out like a warm oatmeal cake. The texture and taste was wonderful. Definetely adding to recipe rotation. Thank you Sunny for a great recipe!

This was good.  I changed a few things.  Used vegetable oil as I don’t like olive oil in sweet dishes.  Also left out the bacon because even though I love bacon it just doesn’t sound good in this dish.  I think the toasted coconut really makes it.

I have made this twice. The first time I followed the recipe (mostly) subbing coconut oil for the olive oil and I halved the sugar because others said it was too sweet.  It was delicious. This time I subbed dried apricots and mango, added cinnamon and nutmeg and increased the milk to 3 cups because of the dried fruit.  I also like a looser oatmeal.  I did not add the bacon.  This is a very versatile recipe.  You can subbed any fresh fruit and nut. Think peaches and pecans, pears and golden raisons, peanut butter and banana. The combinations are endless. This is a wonderfully, easy, delicious breakfast. Thank you Sunny

I loved the idea of baking it and having multiple servings.  It tasted great and had different textures that I liked as well.  I used shaved organic coconut so the coconut was very evident which provided another chewy texture.  It provided me with a quick breakfast before heading to work each day.  I am making it again tonight for this week’s breakfast!

I hate oatmeal but know it is very healthy. So I kept trying new recipes for oatmeal. No luck until I  tried Sunny’s Sweet ans Savory Oatmeal Bake. This is wonderful!! I used dried cranberries instead of coconut and added some cinnamon. Great!!! Keep the recipes coming Sunny.
