Ingredients

  1. 1 stick (8 tablespoons) unsalted butter, melted, plus for greasing the pan
  2. 2 cups quick oats
  3. 3/4 cup granulated sugar
  4. 3/4 cup whole milk
  5. 1 vanilla bean, scraped (see Cook’s Note)
  6. 1 teaspoon ground cinnamon
  7. 1/4 teaspoon ground nutmeg
  8. 1 teaspoon salt
  9. 1 teaspoon baking powder
  10. 1 egg
  11. Heavy cream
  12. Brown sugar
  13. Berries

Instructions

  1. Preheat the oven to 350 degrees F. Grease a 9-by-12-inch baking pan with butter.
  2. Combine the oats and sugar in a medium bowl, then pour in the milk.
  3. Add the vanilla seeds, cinnamon, nutmeg, salt and baking powder.
  4. Next comes the melted butter and the egg.
  5. Then just stir it all together into a big delicious oaty mess of wonder.
  6. Plop the mixture into the prepared pan and spread it out.
  7. Bake for 30 minutes, until set.
  8. Cut into squares while still warm. Serve with cream, brown sugar and berries.

This was delicious! I made it for a Sunday breakfast at church and everyone raved about it. I subbed out a few ingredients but kept the basics for this lovely recipe.

I add blueberries and almonds and substitute white with brown sugar to pump up the nutrients!

LIked this idea, and used a smaller pan fora more cake like finsh. Added blueberries and really moistened up the finish. I would cook longer for use with fresh fruits. also sued Yogurt for oil sub.

I have always loved oatmeal, but this recipe takes oatmeal to another level!! It’s really tasty and smells amazing when it’s baking. I didn’t have a vanilla bean so used 1/2 tsp of vanilla. I may try to make this a bit healthier with less butter next time. I let it cool before cutting so it kept its shape of squares, though, I may bake it 5 minutes more next time as a few squares did crumble a bit (used 8×8 pan at 30 minutes. Oh, an old fashioned oats work too…and didn’t put in the food processor to make my own quick oats. Overall, if you love oatmeal, give this recipe a try!
Ps. I did substitute brown sugar for regular sugar.

Wowza, this is good! I basically did it as she stated this time (only subbed out 1/4 white sugar for brown) and added some blueberries that I were a tad soft and I don’t like eating them like that). Also added 1.5tsp of vanilla instead of the bean. I cooked an extra 10 min and basically got bars, though it does still crumble on the edges a bit…this is “oatmeal” after all. In the future I will try to tweak this so reduce the sugar and butter content by perhaps trying some natural applesauce. I don’t like regular oatmeal because of the mushy consistency so this was so perfect. I almost felt guilty eating this with an egg for breakfast, it tasted too good! Lol. I appreciate Ree’s show always, whether it’s taking some real life hacks or going from scratch.

I used a 9×9 pan and liked the thickness and texture better than the 9×13.

This was pretty tasty, although I couldn’t cut it into squares.  I served it with a large spoon into bowls.

A go-to breakfast.  My husband and I love this recipe.  Added, coconut, walnuts and blueberries.  However, because of adding the coconut, decreased the amount of sugar.
