Mari’s Homemade Oatmeal Cookies

Ingredients

  1. 1 cup (2 sticks) salted butter, room temperature
  2. 1 cup packed brown sugar
  3. 1 cup granulated sugar
  4. 2 large eggs
  5. 1 teaspoon vanilla extract
  6. 2 cups all-purpose flour
  7. 1 teaspoon baking soda
  8. 1 teaspoon baking powder
  9. 1/4 teaspoon salt
  10. 2 cups old-fashioned oatmeal
  11. 1 cup chopped pecans
  12. 1 cup grated coconut

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Using an electric mixer, cream the butter and both the brown and granulated sugar. Add the eggs and vanilla and beat well. In another bowl, sift together the flour, baking soda, baking powder and salt. Stir in the dry mixture to the butter mixture. Then add the oatmeal, pecans and coconut.
  3. Using an ice cream scooper, drop some of the dough on an ungreased baking sheet 2 inches apart. Bake until the cookies turn a light brown, about 10 minutes. Remove from the oven and cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely. Repeat with the remaining dough.

I have made many oatmeal cookies over the years and this receipe is really the BEST!! My husband has always refused oatmeal cookies but he is addicted to these! They are so delishous they disappear as fast as I make them! Look no further for the best oatmeal cookie recipe! This is it!!!!!!!

OMG, I’ve tried many oatmeal cookie for my husband and this is HIS FAV! I cut the sugar beginning at 1/2 and now am using 1/3 as he eats them often….Great cookies- soft! I also blended some of the oatmeal this last batch and he liked that too. Very easy to make.

I can’t tell you how many times I’ve made these cookies for my husband. They are chewy, soft and full of everything he loves, oatmeal, coconut and pecans. And of course lots of love from me since I make them over and over and over……just for him. Well, I may sneak a few 🙂

These are heavenly cookies. I have made them for a couple years now and thought it was time to write a review on them. Not crazy about oatmeal cookies , but these are different. The coconut and pecans make them wonderful. I always toast my nuts with most any recipe to bring out their flavor even more. These are chewey perfection!

This is by far the best oatmeal recipe todate.  I have now thrown out all the other ones.  I might just add raisins the next time, to bump it up a little.  Can’t wait for my next cup of tea !!!!
