Ingredients
- 2 cups packed dark brown sugar
- 1 cup (2 sticks) salted butter, softened
- 2 teaspoons vanilla extract
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3 cups old-fashioned oats
Instructions
- Preheat the oven to 350 degrees F.
- In the bowl of an electric mixer (or using a hand mixer), beat together the brown sugar and butter until fluffy. Beat in the vanilla. Add the eggs one at a time, scraping the bowl after each one.
- Mix together the flour, salt and baking soda in a medium bowl. Add it into the creamed mixture in 2 to 3 batches, mixing until just combined. Mix in the oats until just combined.
- Use your preferred size cookie scoop (or a regular spoon) to drop portions of dough onto baking sheets, spacing them a couple inches apart. Bake until dark and chewy, 12 to 13 minutes. If you’d like a crispier cookie, just cook a little longer!
- Let the cookies cool slightly on the baking sheets, then transfer onto a plate for serving.

I added about 2 Teaspoons of Cinnamon to mine and omg they’re sooooo gooood!!!
Just made these today. Halved the recipe easily. Added cinnamon, dash of nutmeg, semisweet cholate chunks and peanut butter chips. They spread a bit as expected and were quite crispy. I pit nonstick foil on the cookie sheet and they slid off easily. Took 14 minutes at 350 in my oven. They were tasty warm from the oven. I used UNSALTED butter and they weren’t too salty. If using salted butter they would have been too salty

Very cakey; a bit dry. Might be good for kids because it is bland. I prefer flat cookies that are a bit sweeter.
These were very tasty! I added chocolate morsels instead of walnuts. Made them sweeter because of the brown sugar, but still very delicious. The only thing is that they spread. they do taste amazing when you cook a little longer to make them crispy. Im happy tried this recipe . I still give it four and a half stars. Thank you for sharing this recipe.
I’ve made these twice now and they are a hit! I did add walnuts, chocolate chips and cranberries the second time to add to the goodness. It worked out great both times!

Cookies were very thin. Too much brown sugar. I added chocolate chips which made it better.
We did not care for these cookies. Bland and boring. Too much salt. Many people stirred in extra ingredients. I can see why. Won’t make again.
