Tamari-Spiced Nuts

Ingredients

  1. 2 cups raw mixed nuts, such as almonds, walnuts and cashews
  2. 2 tablespoons tamari sauce
  3. 1 tablespoon sugar
  4. 1 teaspoon toasted sesame oil
  5. 1/2 teaspoon Calabrian chili paste
  6. 1/2 teaspoon kosher salt

Instructions

  1. Preheat the oven to 325 degrees F.
  2. Spread the nuts on a small rimmed baking sheet and roast for 15 minutes. Meanwhile, in a medium bowl, stir together the tamari, sugar, sesame oil and Calabrian chili paste. Add the hot nuts to the bowl and toss well to coat. Spread the nuts back out on the baking sheet and sprinkle with the salt. Roast until golden brown and fragrant, stirring every 5 minutes, about 15 minutes more.

I didn’t have any Calabrian chili paste, so I used sriracha. I was afraid the end result would be too salty but no! It’s salty but in a good way.  Once you start eating this, it’s hard to stop! Very addictive! Tamari, just like shoyu and miso, is full of umami.

These are horrible. I followed the recipe exactly, and threw them into the garbage. They tasted like soy sauce. Waste of time and money.
