Stormy Rice

Ingredients

  1. 2 tablespoons vegetable oil
  2. 2 cloves garlic, minced
  3. 1 cup white rice, rinsed
  4. 2 cups chicken broth
  5. 1/4 cup slightly crushed peanuts
  6. 2 scallions, chopped
  7. Salt and freshly ground black pepper

Instructions

  1. In a medium saucepan, heat oil over medium-high heat. Add the garlic and rice and saute 4 minutes, stirring, so that the rice toasts and the garlic cooks. Add the chicken broth to the rice mixture, bring to a boil, then reduce heat to a simmer. Cover and cook for 15 minutes. Remove from heat and let sit covered another 5 minutes. Stir in the peanuts, scallions, and salt and pepper, to taste. Serve with Airman Anderson’s Chicken. Rice can be made 1 day ahead, then warmed and combined with other ingredients before serving.

I tried this recipe as a side dish for the Airman Anderson Chicken. This was a thumbs up by my family! What’s funny is my nine year old said, “mom, you are not chopped” they watch as much food network as I do. This rice was so delicious. I will be making this again an it was so easy!

This is now the only way I make rice! I use Jasmine rice instead of plain white. It goes great with pretty much any Asian dishes (Thai, Indian, etc. that compliment the peanuts. Even if it’s a dish that the peanuts or scallions won’t work with, I still toast the rice and garlic and use chicken broth. Sunny, you have forever changed how I make rice! Thank you!
