Spicy Chipotle Peanuts

Ingredients

  1. Vegetable oil, for pan
  2. 1 tablespoon egg white
  3. Finely grated zest of 1 lime
  4. 2 teaspoons sugar
  5. 1 teaspoon chipotle powder
  6. 1/4 rounded teaspoon ground coriander
  7. 1/4 rounded teaspoon garlic powder
  8. Kosher salt
  9. 1 1/2 cups lightly salted dry-roasted peanuts
  10. 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat the oven to 350 degrees F. Line a rimmed baking sheet with foil; rub lightly with oil.
  2. Put the egg white, lime zest, sugar, chipotle powder, coriander, garlic powder, 1/2 teaspoon salt and 1 tablespoon oil in a medium bowl. Beat with a fork to combine. Add the peanuts and toss to coat.
  3. Spread the spiced peanuts on the prepared baking pan in a single layer. Bake until dry and a shade darker, about 15 minutes. Cool completely before adding the cilantro.

Easy and addictive. I upped the heat with some cayenne and swapped out the cilantro garnish for a light cumin sprinkle.

1/4 rounded teaspoon ground , I think this is the measurement for the coriander.

OMG – these were so easy to make and delicious as well. I made them for a Cinco de Mayo party and they were devoured in minutes. Perfect amount of heat – not too spicy. I left off the cilantro due to my dislike of it. Everyone asked for the recipe. A definite keeper!

Very tasty!  Will be having around the house as a nibble treat!  I used unsalted peanuts and sprinkled some salt lightly on them at the end.  Also used chili powder instead of the chipotle powder since I could not find mine until after I made the recipe!  Enjoy the goodness and tasty treat!
