Pistachio Energy Balls

These healthy snacks are made for pistachio lovers. A quick pistachio butter is loaded with dates, oats, honey and coconut, then rolled in chopped pistachio for a delicious nutty crunch.

Ingredients

  1. 1 heaping cup shelled raw pistachios
  2. 1 1/2 teaspoons vegetable oil
  3. Kosher salt
  4. 1/3 cup rolled oats
  5. 1/3 cup finely chopped pitted dates (4 to 6 dates)
  6. 1/4 cup sweetened shredded coconut
  7. 1/4 cup honey

Instructions

  1. Preheat the oven to 375˚ F. Spread the pistachios on a baking sheet and bake until lightly toasted, 8 to 10 minutes. Immediately transfer to a food processor and pulse until finely chopped. Remove and set aside 2 tablespoons of the chopped pistachios for coating.
  2. Add the vegetable oil and a big pinch of salt to the remaining pistachios in the food processor. Process, scraping down the sides as needed, until the pistachios start to clump, then continue processing until creamy and smooth, up to 10 minutes total.
  3. Scrape the pistachio mixture into a medium bowl and add the oats, dates, coconut and honey. Beat with a mixer on medium-high speed until combined.
  4. Roll the mixture into 3/4- to 1-inch balls (you should get 12 to 15 balls). Roll in the reserved chopped pistachios. Set on a plate and refrigerate until firm, about 30 minutes.

How long do these keep? Assume they need to be refrigerated?

I processed the pistachios in the food processor and then added dates, coconut and used coconut oil instead of vegetable oil and continued to process. No need to use two appliances and the consistency was more homogenous,  easier to form into balls. Did not reserve pistachio bits for coating. Not necessary and obviously would be difficult to adhere. I also only used a fraction of the oatmeal and processed it in the food processor at the end. Final little ball of goodness was delicious.

Good and easy. I got 14 balls out of this. I used the food processor only for this instead of switching to the mixer.  The pistachios for the coating need to be chopped very fine.  Mine were too coarse so they didn’t stick like I’d wanted.  Next time, I will chop these separately.  I agree with Jimmy below that extra pistachios should probably be reserved.

Really good. Maybe leave extra ground pistachio for the coating.
