Ingredients

  1. 6 tablespoons sugar
  2. 1 1/2 teaspoons ground cinnamon
  3. 1/2 teaspoon ground allspice
  4. 1/2 teaspoon ground ginger
  5. 1/4 teaspoon ground cloves
  6. 1/4 teaspoon grated nutmeg
  7. Kosher salt
  8. Vegetable oil, for oiling the baking sheet
  9. 1 large egg white
  10. 4 cups unsalted raw hazelnuts

Instructions

  1. Mix together the sugar, cinnamon, allspice, ginger, cloves, nutmeg and 1 1/2 teaspoons salt in a small bowl and set aside.
  2. Preheat the oven to 350 degrees F. Lightly oil a rimmed baking sheet.
  3. Put the egg white in a large bowl and whisk until frothy. Add the hazelnuts and toss to coat in the egg white. Add the spice blend and toss to coat again.
  4. Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, then transfer to a large bowl.
